So my 2nd Whole30 didn't pan out so well. I was doing it to support my mother's first Whole30 instead of doing it for me. This time, it's for me again. I've attempted to get my entire family on board, however, I don't see that happening the way I'd like it to. Deep breath.... and... let go. I've really been eating terribly and have put on a few pounds. Plus all the ailments mentioned in my previous post. I can't wait for those pounds to come off, to have a level head, happy demeanor, and for my nose not to be constantly running. I don't think the next 30 days will be the difficult part. I've done it before; I know I can do it again. The hard part is afterwards. Figuring out how to balance clean, paleo eating with every day life. I'll need to re-intro properly this time. No Vegas In-N-Out cheeseburger with fries and a chocolate milkshake bender as my first post Whole30 meal (hello grains, dairy, and sugar scarfed down in a matter of minutes!).
This is an effort to track my journey, progress, and show you what I eat and how I manage it with 3 kids and a full-time job. Without further adieu....
Yesterday, I baked 3 sweet potatoes, made two egg frittatas with mushrooms, green peppers, and orange peppers, cooked a spaghetti squash and a butternut squash, browned two pounds of ground beef, marinated and pan seared/fried chicken, and made a sauce to accompany the chicken (I left out the chili pepper and cayenne pepper). I also made some beautiful, creamy almond butter in my new Ninja. Oh yes, and I made some No Otmeal for the girls to have this morning. This was an all day effort, mixed in with playoffs (GO BRONCOS!!!!) and toddler wrangling and nursing (WHY WON'T EITHER OF YOU WEAN ALREADY!). I had it all under control in the morning, feeling pretty good about myself; however, by the time the evening rolled around I was an overwhelmed mess. I'll need to figure out how to manage that better. I think once I'm in a better state of mind, things will come a little easier.
Meal 1
8:00 am: 1/2 Sweet potato, a 'slice' of egg frittata, coffee with coconut milk, and water. (As before, this will be predictable every morning)

Pre-Workout
10:30 am: Avocado
11:00 am: Applegate Chicken and Apple Sausage
12 pm: Gauntlet Workout at the gym. Weighed myself - 126. Bad news.
1:30 pm: Leftover spaghetti squash, chicken and sauce.
3:30 pm: STARVING. Other slice of egg frittata. Thank God I brought it. Also, my nose has already stopped running.
6:00 pm: Banana with almond butter.
8:00 pm: Sloppy Joes with a lettuce wrap and butternut squash on the side. The sloppy joe recipe was delicious. The whole family thought so! That was a win since M&M both did not make it through day 1. Oh well, I'll keep on trucking.
I made another egg frittata tonight while making dinner. Both were super easy and quick.
